Finally I received some informations about the crossbow I bought.
Here you can see some pictures. Unfortunatelly, it is in italian language.
This replica come from an original in "Castel Tirolo" in the province of Bolzano (Italy, of course).

Ho incluso il nuovo cappello d'arme e Zuppa Armandi (decisamente più corposa e rigida). Inoltre gli abiti sono del tutto differenti.
J'ai inclus le nouveau chapeau d'arme et Soupe Armandi, résolument plus corposa et rigide. Les habits sont du tout différent en outre.
I have included the new kettle hat Gambeson (more full-bodied and rigid). Besides the suit is different.

Il camaglio verrà modificato, accorciato e reso integrale, con solo l'apertura per gli occhi. Il cappello d'armi verrà dipinto di rosso e bianco.
Le camail sera modifié, raccourci et rendu intégral, avec seulement l'ouverture pour les yeux. Le chapeau d'armes viendra peinture de rouge et blanc.
The camail will be modified, shortened and made integral, with only the opening for the eyes. The kttle hat will be painted of red and white.

Il Balestriere ha ricevuto alcuni degli aggiornamenti di cui avevo accennato.

Ho dipinto l'elmo e incluso un camaglio integrale.
Le modifiche al camaglio (che avevo commissionato) tuttavia non mi soddisfano del tutto, i lati sono infatti stati privati di un numero eccessivo di anelli, rendendolo inadeguato, dovrò provvedere, forse personalmente.
I have painted the helmet and included an integral camail.
The changes to the camail (that I commissioned) don't satisfy entirely me, the sides have been in fact deprived of an excessive number of rings, making it inadequate, I must provide, perhaps personally.

Alla zuppa armandi sono state aggiunte alcune cuciture a mano (sebbene non si noti molta differenza a una certa distanza) con filo di canapa, esse sono presenti solo nella parte frontale e il colletto (non visibile), successivamente verranno incluse anche nelle braccia e nel retro.
To the gambeson I have included some hand seams (although a lot of difference is not noticed to a certain distance), they are present only in the frontal part and the collar (not visible), subsequently it will also be included in the arms and in the back.

The trigger/lock system is quite simple and easy to make/repair, almot nothing can go wrong with it.
I see that you don't use a hook to draw the string, you do it with just your hands ?

Yes, for this type of crossbow I can use just my hands to draw the string.

Unfortunately I do not have a source about an arrow bag of the XIII century. The guy that created my bag said that there are still some doubts unresolved, due to lack of sources, so he used some XV century sources.
